Tasting Notes:
Black berry, fruit leather, spice and a hint
of oak give way to elegant fruit flavors in
the mouth with nice tannin structure and
a lingering finish.

Fermentation:
A terrific blend of Bordeaux varietals grown on the warmest south
facing slopes on our estate vineyard. The rocky, shallow volcanic
soils on this slope help control vine growth and maintain heat to
allow the Cabernet Sauvignon to ripen to its full potential. This
Cabernet was fermented in small oak barrels for 18 months to capture
the dark, rich black fruit characteristics. |
